Standard chocolate is a processed product made by combining:

  • Cocoa butter (sometimes replaced with other fats)

  • Emulsifiers or flavourings

While delectable, most chocolate available in supermarkets has been excessively processed.  The cacao has been roasted at high temperatures, which has made it less nutritious. Often, the natural bitterness of the cacao is masked with sugar, and the result is more of a confection than a plant-based food.In many cases, chocolate also comes from mass-produced supply chains, where transparency and fair trade are not guaranteed.
